Spiced Mixed Fruit Bread Recipe

Servings: 2 small Loaves

 Ingredients from your Baking box:
    You will also need:

    460g Bread Flour

    250-300 ml Tepid water

    7g Yeast 

     3g Pinch of Salt 

    50g Brown Sugar

     30ml Vegetable Oil 

    1 X Mix Mixed Fruit, Spice, Orange Zest

     

    The Recipe

    1. Heat the oven to 200°C fan/gas 6.
    2. Use 50mls of warm water, add the yeast and sugar. Stir and leave until it starts to foam, that means its working.
    3. Drain the fruit well and squeeze any excess water, if you have soaked it.
    4. With a dough hook on your mixer, add the flour, salt. Add the yeast mix slowly, then add the Britain Loves Baking Fruit and Spice Mix and then add the rest of the water 40 to 50ml’s at a time.
    5. Mix for 4-5 minutes. Stop the mixer and feel the dough. It should spring back when you push your finger into it and be smooth it texture.
    6. Place in a bowl (oil it lightly), cover with cling film and leave in a warm place for 30-40 minutes to prove or nearly doubled in size.
    7. Tip the dough out until a lightly floured surface kneed for about 30 seconds, and then cut it in half and shape into 2 dome shapes.
    8. Place on a greased baking tray or in loaf tins.
    9. Cover again with cling film and leave to rise for 25-30 minutes looks like its doubled in size.
    10. Bake in the oven for 40 minutes or until well risen and golden brown. To see if it is done, turn one over and tap the bottom. If it sounds hollow then its done, if not leave for another 5 minutes.
    11. Remove and leave on a cake rack to cool.

    @GregTheBakers Tip: Pour 15ml of water into the bottom of your oven before placing your baking tray in to create steam that will help the dough to rise
