Snickerdoodle Cookie Recipe

 Servings: 18 - 20 large Cookies

 Ingredients from your Baking box:
    You will also need:
    1x Large bag of Special Cake Mix
    2 x eggs
    2x Bags of Cinnamon Sugar

    2 egg yolks

    1 x Bag of brown sugar

    220g butter

    10g of Vanilla Extract

    1x Packet of Cinnamon


    The Recipe

    1. Preheat oven to 325°F., 220 or Gas 6
    2. Line a baking sheet with a parchment paper and set aside. 
    3. Put aside 50g of sugar for later)
    4. With the paddle attachment attached to your mixer, mix the butter, vanilla and both the sugars together on medium speed until light and fluffy, 2-3 minutes.
    5. Add in the egg, the yolk and mix for 1 minute, scraping the sides of the bowl as necessary.
    6. Turn the speed right down to 1 and spoon in the cookie flour mix until it's all mixed.
    7. Using a medium (2- tablespoon) cookie scoop portion out the dough and roll into a ball. Then roll each cookie dough ball into the cinnamon-sugar mixture until coated.
    8. Place on prepared baking sheet about 12 cm apart
    9. This mix should make about 18 to 20 large cookies, more if smaller.
    10. Bake for 11 minutes and then remove from the oven.
    11. Allow the cookies to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool.
