Snickerdoodle Cookie Recipe

1x Large bag of Special Cake Mix

2 x eggs |
2x Bags of Cinnamon Sugar
|
2 egg yolks |
1 x Bag of brown sugar

220g butter |
10g of Vanilla Extract

1x Packet of Cinnamon |
The Recipe
- Preheat oven to 325°F., 220 or Gas 6
- Line a baking sheet with a parchment paper and set aside.
- Put aside 50g of sugar for later)
- With the paddle attachment attached to your mixer, mix the butter, vanilla and both the sugars together on medium speed until light and fluffy, 2-3 minutes.
- Add in the egg, the yolk and mix for 1 minute, scraping the sides of the bowl as necessary.
- Turn the speed right down to 1 and spoon in the cookie flour mix until it's all mixed.
- Using a medium (2- tablespoon) cookie scoop portion out the dough and roll into a ball. Then roll each cookie dough ball into the cinnamon-sugar mixture until coated.
- Place on prepared baking sheet about 12 cm apart
- This mix should make about 18 to 20 large cookies, more if smaller.
- Bake for 11 minutes and then remove from the oven.
- Allow the cookies to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool.
